The whiskey industry's dirty little secret »

Whiskey distilleries have one of the worst economic propositions going, but a slew of scientific tricks — from low-tech tweaks to high-tech wizardry — are being used to make whiskeys you’ll find on back bars today.

Charleston-based Terressentia is one of a few startups doing secretive work at reinventing the distillation process, and CEO Earl Hewlette describes his company as taking a “back to basics” approach that combines “ultrasonic energy, oxidation and temperature to force certain chemical reactions.”

Hewlette says his process can create the equivalent of a seven-year-old bourbon in, get this, 12 to 18 hours, 250 gallons at a time.
